Ingredients:

For the Chicken Filling:

- 1 pound (about 450g) boneless, skinless chicken breasts, cooked and shredded

- 2 avocados, ripe, peeled, and diced

- 1 cup cherry tomatoes, halved

- 1/2 red onion, finely diced

- 1/4 cup fresh cilantro, chopped

- Juice of 2 limes

- 2 tablespoons olive oil

- Salt substitute and pepper to taste

 

For the Lettuce Wraps:

- Large butter lettuce leaves, washed and patted dry

 

Optional Toppings: Salsa verde, hot sauce, sliced radishes, jalapeño slices

 

Instructions:

1. Prepare the Chicken Filling:

   - In a large bowl, combine the shredded chicken, diced avocados, cherry tomatoes, red onion, and chopped cilantro.

   - In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper.

   - Pour the lime dressing over the chicken mixture and toss gently to coat.

 

2. Assemble the Lettuce Wraps:

   - Take a large butter lettuce leaf, spoon the avocado lime chicken mixture onto it, and fold the sides to create a wrap.

 

3. Optional Toppings:
