Beef and Veggie Breakfast Wraps

Ingredients:

- 2 Egg Life wraps

- 6 oz lean beef (such as sirloin or tenderloin), thinly sliced

- 1/4 cup onions, diced

- 1/4 cup bell peppers, diced

- 1/2 cup spinach or kale, chopped

- 1 tablespoon olive oil

- 2 eggs

- 1 tablespoon fresh chives, chopped

- Black pepper to taste

 

Instructions:

 

1. Cook the Beef:

   - Heat olive oil in a skillet over medium-high heat.

   - Add the thinly sliced beef and cook until browned and cooked through, about 4-5 minutes. Remove the beef from the skillet and set aside.

 

2. Prepare the Vegetables:

   - In the same skillet, add a little more olive oil if needed.

   - Add the diced onions and bell peppers. Sauté until softened, about 5 minutes.

   - Stir in the chopped spinach or kale and cook until wilted, about 1-2 minutes.

 

3. Scramble the Eggs:

   - In a bowl, beat the eggs and season with black pepper.

   - Pour the beaten eggs into the skillet with the vegetables. Stir gently until the eggs are fully cooked, about 2-3 minutes.

 

4. Combine Beef and Veggies:

   - Return the cooked beef to the skillet and mix with the eggs and vegetables. Heat through for another 1-2 minutes.

 

5. Assemble the Wraps:

   - Lay out the Egg Life wraps on a clean surface.

   - Divide the beef and veggie mixture evenly between the wraps.

   - Sprinkle with fresh chives.

 

6. Serve:

   - Roll up the wraps tightly and cut in half if desired.

   - Serve hot and enjoy a hearty, satisfying breakfast!
