Citrus-Grilled Salmon Salad

Ingredients:

- 1 salmon fillet (about 6 oz)

- 2 cups mixed lettuce (such as Romaine, Arugula, and Spinach)

- 1/2 cucumber, sliced

- 1/4 cup radishes, thinly sliced

- 1/4 cup bell peppers, sliced

- 1 tablespoon olive oil

- Juice of 1 lemon

- 1 teaspoon fresh chives, chopped

- Black pepper to taste

 

Instructions:

 

1. Prepare the Salmon:

   - Preheat your grill or grill pan to medium-high heat.

   - Rub the salmon fillet with olive oil and season with black pepper.

   - Grill the salmon for about 4-5 minutes per side, or until cooked through and flakey. Brush the fillet with lemon juice while grilling for extra flavor.

 

2. Prepare the Salad:

   - In a large bowl, combine the mixed lettuce, cucumber, radishes, and bell peppers.

   - Toss with a splash of olive oil and a squeeze of lemon juice. Season with black pepper to taste.

 

3. Assemble and Serve:

   - Place the grilled salmon on a plate and serve alongside the fresh salad.

   - Garnish the salmon with chopped chives.

 

This Citrus-Grilled Salmon Salad is light and full of fresh flavors, perfect for a summertime lunch!
