3 cucumbers
1 8 oz low-fat lemon yogurt
1/4 cup chopped walnuts
1/2 cup currants
Pinch of salt
1/4 teaspoon dried mint flakes
1/4 teaspoon dried basil leaves
Peel cucumbers; halve lengthwise. Remove seeds; cut into 1/4-inch slices. In medium bowl combine cucumbers and remaining ingredients; toss gently. Cover; refrigerate at least 1 hour to blend flavors. Stir just before serving.
1/2 cup is 1 serving. Makes 8 servings
